Russian Tea Cookies

October 9, 2009

My favorite cookie ever. Recipe shamelessly stolen from I made these while I was home and they are fantastic. Rolling the cookie in powdered sugar while still warm is KEY. And don’t eat until they’re cool and all the flavors have had a chance to meld.

* 1 cup butter
* 1/2 cup confectioners’ sugar
* 2 1/4 cups all-purpose flour
* 3/4 cup chopped walnuts
* 1/4 teaspoon salt
* 1 teaspoon vanilla extract
* 1/3 cup confectioners’ sugar for decoration

1. Combine all ingredients, mix well.
2. Refrigerate dough until chilled.
3. Roll dough into 1 inch balls and bake for 15 minutes in a preheated 350 degree F (175 degrees C) oven.
4. Once baked, roll while still hot in confectioners’ sugar until coated. Let cool. Lightly dust with more confectioners’ sugar.
