Honey Mustard Chicken

February 21, 2009

Because I’m crazy bored at work and am fiending this for dinner tonight.

Honey Mustard Chicken

6 tbsp melted butter or margarine
4 chicken breast halves
1/3 cup honey
Mustard to taste…I use 1.5 tbsp. I use spicy deli mustard but you can use whatever mustard calls to you.

1) Preheat oven to 325*.
2) Combine melted butter, mustard, and honey in a mediumish bowl.
3) Go ahead and dip your finger in the mix and taste. Make sure the honey/mustard ratio is what you want.
4) Lay? Lie? Place the chicken breasts in a shallow baking dish and pour the mixture over them.
5) Cook for forty five minutes to one hour, basting every 15 minutes.
6) Enjoy. Tonight’s chicken will be accompanied by cantaloupe.
